Oil less Cajun Fried Turkey

Thanksgiving is around the corner, needless to say, it's my favorite holiday because it is ALL ABOUT FOOD! 
I have experimented with many Turkey recipes over the years and found fried Turkey to be the most flavorful which is moist inside and crisp on the outside. But there are several things I don't like about the traditional fried Turkey. The injection liquid tastes artificial; simply unacceptable to the foodie. The whole frying process, with gallons of expensive peanut oil can be overwhelming and wasteful. Then, there is the risk of murdering one spouse with the excess calories or stress before the evening is up, trying to watch the frying pot, cook all the sides, keep the children out and decorate the house. 
I have finally found the way to fry a Turkey which would lock all the natural tastes of fall and crispy on the skin without an oz of extra calories other than the big bird itself. The answer is Char-Broil The Big Easy Oil-Less Infrared Turkey Fryer.
( If you like Cajun and prefer baking it, you can prepare the same way like I described in the feed and stuff fall aromatics, like apples, pears, rosemary, onions, carrots etc and bake according to the instruction on the Turkey package)
Recipe as follows:
After thawing the bird ( about 15-16 pounds), prepare the Brine about 2 days before day of serving.

For the brine:

  • 1 cup kosher salt
  • 1/2 cup light brown sugar
  • 1 gallon vegetable stock
  • 1 tablespoon black peppercorns
  • 1 1/2 teaspoons allspice berries ( or 5 spice powder) 
  • 1 1/2 teaspoons chopped ginger
  • 1 gallon heavily iced water
Combine the vegetable stock (or chicken stock) , salt, brown sugar, peppercorns, allspice berries, and ginger in a large stockpot over medium-high heat. Stir occasionally to dissolve solids and bring to a boil. Then remove the brine from the heat, cool to room temperature, and refrigerate. Place the thawed turkey (with innards removed) breast side down in brine. If necessary, weigh down the bird to ensure it is fully immersed, cover, and refrigerate or set in cool area for 8 to 16 hours, turning the bird once half way through brining.
After removing the bird from brine, it is time for the rub. 

Ingredients For the Rub:

  • 25 medium dried bay leaves
  • 3 1/4 teaspoons dried thyme
  • 3 1/4 teaspoons dried oregano
  • 1 1/2 teaspoons whole black peppercorns
  • 3 tablespoons hot Creole seasoning
  • 2 teaspoons garlic powder


  1. Pat the turkey dry. Finely grind bay leaves in spice grinder; transfer to small bowl. Finely grind thyme, oregano, and peppercorns separately; add to bay leaves. Mix in Creole seasoning and garlic powder.
  2. Rub 1/3 spice mixture on inside of turkey, 1/3 under skin of breast, and 1/3 on outside of turkey; place in roasting pan. Cover; marinate overnight in refrigerator or up to 24 hours.
Finally, when you are ready to fry. Use a paper towel and wipe off as much marinate "debris" as possible. Then gently place the bird in the cage and into the Oil less Fryer. Depending on the weather condition, it takes about 5- 10 minutes a pound. Go Ricochet and check the bird in a couple of hours and pull it out of its cage when the temperature of the thickest part (usually the thigh) hits 170 degree.

With all due respect, Bill O'reilly, you are wrong!

Bill O'reilly is not just wrong, he is full of crapbull on the third Presidential Debate. 

On Fox and Friends this morning, Bill asserted Romney wanted the woman's vote, so he took a soft approach and avoided calling the handling of Benghazi as "Incompetence", hence forgoing the chance to turn Obama "into a puddle".  To the Fox crew, he asked if anyone learned anything new and since no one did, Bill proclaimed it as the most boring debate. 
Romney was not at the debate to provide entertainment or teach a class. He was at the debate to interview for the position as the Leader of the Free World. A position that has been pathetically shrunk  in the last 4 years. Obama was "present" on American Foreign Policy George Bush had laid out, but he did nothing to lead. This is what Romney was trying to show. Undeniably, the women's vote will be won over, but it is incidental. Why? Because women have a greater propensity in terms of handling interpersonal relations. Women's preferred problem solving model is to listen and talk through first. Especially in leadership positions,  women do not respect emotional outbursts or bully tactics. These  are the same qualities required to lead the world. 
On Benghazi, it was a brilliantly calculated move. A clear win over Obama. Romney already took the shot on Benghazi in the last debate. It has triggered the whole nation's attention towards Benghazi. Even die-hard democrats agreed that things could have been different. The undecideds already have doubts about Benghazi. 4 Americans are dead, clips of protest on the news everyday. Confronting Benghazi last night yield a much lower utility than to appear presidential and calm.  Obama wanted Romney to engage in the Benghazi topic, as seen in the last debate. It got into a "he said, he said" situation which will make Romney look petty as well. Most americans have a basic distrust towards politicians. There are always enough spin in the news followed to suppport both arguments. On taking the higher ground, Romney was safeguarding the bigger picture - his Mittmentum. 
Who do you feel safer with? Who is more likely to look at a situation calmly and act decisively? Who is more in charge? heck, who will show up as the Commander in Chief and work effectively with the military?
Obama brought his game face and spin the best he could punctuated with the "me"s and "I"s. He was petty and irritable and his voice was less commanding. We wake up today remembering far more lines of Romney that Obama." We will show more BackBone", " We Free Countries from Dictatorship", "30,000 dead in Syria" etc  Once again, all the eloquent talking points in the world cannot heal the obvious breakdown of Obama's foreign policy. 
O'reilly is right to say that Obama was trying to show how Romney switch position through lies. And Romney has explained them as lies. It won't matter because most Americans already assume Politicians will switch positions. As long as they do it prudently in the interest of the country. 
Romney does not need to be a bully to prove competence. He was not soft, he was understanding and pleasant. Clear-minded with laser focus on building America's economic strength and unapologetic for American principles. The qualities needed to work with allies all over the world. 
In business, we do not just focus on closing the deal, because it is not the deal that would really matter, it is the subsequent deals that do. It was critical for Romney to leave a pleasant after taste from now till Nov 6 to counter more personal smears and attacks.

The major post debate polls are showing most debate watchers think President Obama was
the winner — and a typical finding comes in the CNN post-debate poll of registered voters who actually watched the debate.
They were 33 percent Democratic and 33 percent Republican — which means it’s weighted a bit to include about 8 percent more Republicans than the voting population as a whole.
Bottom line: by 46-39 percent, the poll respondents called Obama the winner. But asked who did the debate make you more likely to vote for, the respondents were tied between Romney and Obama, 25-25 percent.
Still, Romney won in other key areas:
*On who would better handle the economy: 58 percent Romney; 40 percent Obama.
*On who would better handle health care: 49 percent Romney; 46 percent Obama
*On taxes: 51 percent Romney; 44 percent Obama
*On who is a stronger leader: 49 percent Romney; 46 percent Obama
*On who is more likeable: 47 percent Obama: 41 percent Romney
*On who cares more about your life: 44 percent Obama; 40 percent Romney

I’m a swing voter — I voted for Obama in 2008 and Bush in 2004 — and I am genuinely undecided this year. Those of you who are pleased with these seemingly exciting new weapons to use in the fight to defeat Obama are losing perspective. You are not thinking about how you look to the people you need to convince. Here’s a clue: You look ugly.

Obama's Second Term

Where have I been? I owe all my readers an explanation.

Last few weeks I have been busy with getting my children back to school and getting back into schedule. Of course, besides doing all the fun things as a family, I have been really engrossed in the Presidential Election. There is not enough words to describe how important this election will be for all of our future especially for our children. This is why I care about this event more than any other events outside my family.

If re-elected, Obama will have the permanent powers to replace 3 supreme court Justices in this country, hence shifting this country completely left. He would be un-tethered to any public opinion and launch his socialist agenda full swing. The America's Free Trade Capitalism is like a huge bus pivoting on the edge of a cliff. Obama's second term will push it all the way over. History has shown us, redistribution does not work. Name one country in the world which is socialist and is strong economically..

In his second term too, Obamacare will be firmly established in this country. Our health care and our children's healthcare will be in the hands of the bureaucrats. As Milton Friedman once said, "If you put the federal government in charge of the Sahara Desert, in 5 years, there would be a shortage of sand. Corollary : if you put federal government in charge of health care, in 5 years there will be a shortage of wealth. Do we really want our health care to be like utility? Can we be satisfied with healthcare being supplied cookie cut? One plan fits all? Not to mention the insane waste and neglect that come along in a heavy bureaucratic system. And what about innovation, research and the incentives to discover more treatments ?

The very founding principles that made America exceptional will be under assault. First to go out of the window will be gun ownership, follow closely by Freedom of Speech. As can be seen from Obama and Hilary Clinton's determination to enforce "anti blasphemy" laws as well as the infamous Fairness Doctrine.

Redistribution will be the backbone of the economy. Higher taxes to those who create private jobs hence lesser private investment. More punishment tactics on the wealthy (by Obama's current definition is $250,000 income a year), greater promotion of class warfare and covetousness. Obama believes in job creation coming primarily from government. The most inefficient arm of any economy. So we will witness a substantial  increase in size of government and more control in our lives. Basically, it will be the birth of Berlin Wall in America and cultivation of the United Nanny States of America. There will be a dramatic drop in standard of living and increase cost of living. Inflation will skyrocket. USD will continue to drop in value.

In education, the heart of all educational policies will be union-centric instead of student-centric. American students will be taught to "go to sleep" and let Obama's machinery rule their minds.

National Security will be at all time low. We are losing allies around the world, terrorism is festering at alarming speed especially home grown terrorism. More of fort hood incidents will occur and the next 911 incident will take shape. Calling Fort Hood work place violence. Turning Libyan embassy attacks into a law enforcement issue is winding the clock back to the first twin towers bombing. Exactly the way Bill Clinton handled it. Instead of nipping it in the bud, it took 3000 lives for Americans to learn these terrorists are determine to murder innocent lives. Re-enacting this approach is setting the stage for the next catastrophe.

Obama's second term is to America what the American flag is to the middle east, shredded and disintegrated to the ground.

What can I do as a parent ? Donate to Mitt Romney and Pray. Ultimately, less than 100,000 people in this country will determine the future of our children. It can be nerve-wrecking. But if we believe in God and Democracy, then we must believe that ultimately Good will triumph Evil. 6 weeks and we will know the future of America. In God, we must Trust.

Christ Christie's calm Straight Talk Surprised many at Republican Convention

It's obvious that no matter what Obama does, his approval and likeability will not drop below 44%.  The new Republican message is positive, forward and energetic. Christ Christie was saying plainly, "Hey, we feel your pain." To the struggling workers all over the country  he sounded like a good friend,  no rhetorics, just straight talk. Makes you want to buy him a beer.

We New Jerseyans are proud of our governor today.
We wondered yesterday which shade of the colorful orator would show up in Tampa.
There was some reservation that he may bring on the full-Jersey and simply crack wise about the President all night.  That would have been fun, but the fear was that he may act a little too tough to play in Peoria.  This is the man who has made calling people "idiot" and "moron" part of his usual political discourse.
We wondered if he would reach out past the base to show the country that he has a green side (he's a man-made climate change adherent) or his bland colors, as in NJ he now talks of "walking the boulevard of compromise" to work with Democrats.
Chris Christie traded colorful for smart.  His speech was brilliant because it went right to the personal identifier of the base without cheap pandering applause lines:  He told America the way out of tough times was acknowledging our bad situation and working our way out of it.
Trade "love" for "respect."  The new tough love.  Just brilliant.
That message was not just for government budget makers, but for Americans on a personal level.  He contrasted society's makers from the takers.  On its most simplified level, that is the difference in political thought and lifestyle between American conservatives and liberals: Those who build this and those who don't.

Cronyism occurs when an individual or organization colludes with government officials to create unfair legislation and/or regulations which give them forced benefits they could not have otherwise obtained voluntarily. That Sucked, I Sucked, You Suck - Unique Components of American Exceptionalism

The other day, Peter asked what it was that made America exceptional and he bemoaned the fact that America seemed no longer exceptional. He is wrong, exceptionalism is our culture and can be defined by our willingness to express/accept the sentiment contained in six simple words - That sucked, I sucked, you sucked. Allow me to explain.
That sucked - This is the most simple and is found in our innovative stance throughout the world. First look at our founding documents. The founding fathers looked at the political systems prevalent in the world at that day and decided that they would design something different. For an inventive example look no further than Edison - His research lab experimented with thousands of different filament materials to make his perfect light bulb - defined as one that lasted for 1200 hours. Obviously, today that number sucks.
For the vast majority of humans, however, things suck so badly that those unfortunate people have a difficult time picking those over which they have control and changing them. They are bound by culture (this is how my father fished and I must fish the same way), apathy (wherein everything sucks so terribly that it is difficult to pick something to change) or corruption - where the majority of their profits are consumed by petty bureaucrats (the spark that lit the Arab spring). We Americans are blessed with the heritage of Yankee Ingenuity and this is one facet of American exceptionalism that we export.

Here are some responses from the Rico-world
There is a difference between voluntary giving and being force to give through taxes. Romney didn't denigrate the achievements of Olympic athletes or push legislation that hurt their performance. Romney refers to parents, sisters, brothers, communities, church that offer support.

Obama on the other hand, refers exclusively to "government". a federal teacher, firefighter, roads, bridges, government programs. businesses cannot survive without BIG BROTHER. This is the Life of Julia, she's married to the state.

Obama was excoriating businessmen, his tone filled with contempt and dislike. It's hard to imagine that Romney was saying to the sprinters "You think you're here because you're so fast? There's a lot of fast people out there!" Saying "You're wonderful, and I want to say thank you to everyone who helped you to be this great" is entirely different to saying "you think you're wonderful, but you had your success handed to you by others".
An Olympic runner may not stand alone, but he runs alone. A business woman may not operate in a vacuum, but she owns her success.

People who are lawfully permitted to carry weapons don’t typically commit crimes. If you ask me, the families of the victims and the victims themselves have a legal case against the cities of Aurora and Denver and should sue to have their rights restored to them. This type of evil is senseless, as the President remarked in Florida at a campaign event in Florida this morning. And it could have possibly been better had just one citizen been permitted to exercise his God-given rights to self preservation.
Please pray for these victims, their families and their neighbors. They will need it.
